I recently learned of SchemeIt, a simple schematic drawing tool from DigiKey. It's not intended for schematic capture for later conversion into PCB Gerber files, but is quite suitable for simple illustrations.
A full blown CAD tool like Eagle (which I'm just starting to learn) is a bit heavyweight for simple schematics. SchemeIt should be faster for these, just like Paint is sometimes faster than PhotoShop, and WordPad (or even Notepad) is sometimes faster than Microsoft Word.
SchemeIt can export PDF or PNG files. I plan to use it to post some schematics to this blog. Here's an example of a SchemeIt-exported PNG:

It runs inside the browser, so no installation is necessary. Here's a screenshot of the editing session that produced the above PNG:
It has BOM tracking capability, which I don't plan to use. However, this feature is probably why DigiKey makes this tool available.
